ABSTRACT: We use an effective chiral quark theory to describe the structure of the single nucleon, the nuclear matter equation of state in the mean field approximation, the medium modifications of nucleon properties, and the equation of state at high baryon densities. Concerning the medium modifications, we put emphasis on the structure functions, i.e., the spin-independent ones related to the familiar EMC effect, and also the spin-dependent ones which give rise to the "polarized EMC effect". Concerning the equation of state at high baryon densities, we investigate the role of diquark condensation (color superconductivity) for a possible phase transition from nuclear matter to quark matter.
